I love trying new recipes in the summer, especially with some fresh produce! Here are some recent recipes I have tried and loved.
1. Pommes Dauphinoise- an Easter brunch favorite
Ingredients
1 tbsp unsalted butter
8 ounces Gruyère cheese
2 1/2 lbs Yukon Gold potatoes
3 cloves garlic
2 c. heavy cream
2 c. whole milk
1 tsp. kosher salt
1 tsp. freshly ground black pepper
1/2 tsp. ground nutmeg
2 dried bay leaves
1 tsp. fresh thyme leaves
Directions
1. Arrange a drack in the middle of the oven and heat to 350. Coat a 9x13-inch baking dish with 1 tbsp unsalted butter. Grate 8 oz. gruyere cheese (about 2 cups).
2. Peel potatoes and slice into 1/4-inch thick rounds and mince garlic. Add to a large pot with heavy cream, milk, salt, pepper, nutmeg, and bay leaves. Bring to a simmer over medium heat for 5-7 minutes, stirring often (until potatoes are fork tender but still slightly firm). Remove and discard bay leaves.
3. Using a slotted spoon, transfer half the potatoes into the prepared baking dish and arrange in an even layer. Top with half the grated cheese. Add the remaining potatoes in an even layer. Pour about 2 cups of the cream mixture on top, stopping just below the top layer (do not use all of the mixture). Top with remaining cheese.
4. Bake until the potatoes are golden brown and easily pierced with a knife and the way to the bottom of the baking dish, 40-45 min. Garnish with fresh thyme leaves. Let cool at least 15 min before serving.
Serves 8-10 people.
2. Nicoise Salad
Ingredients
2 cups Bibb lettuce
1/2 cup northern beans
1/2 cup tomatoes
1/2 cup roasted potatoes
1/2 cup steamed green beans
1 tbsp. fresh parsley
Dressing: 3 tbsp. minced shallot, 1 heaping tsp. Dijon, 1/3 cup white wine vinegar, 1/4 cup olive oil, 1/4 tsp. salt and pepper.
Directions
Add all ingredients to a bowl and enjoy!
3. Jennifer Anniston Salad
Ingredients
3.5 cups cooked quinoa
2 cups chopped cucumber
1/4 cup chopped parsley
1/4 cup chopped mint
1/3 cup chopped red onion
1/2 cup chopped pistachios
1 can chickpeas, drained and rinsed
juice of 1 lemon
1/4 cup extra virgin olive oil
1/3 cup apple cider vinegar
Salt and pepper to taste
1/2 cup crumbled feta
Directions
Combine all ingredients in a bowl and enjoy!
4. Chia Seed Pudding
Ingredients
2 tbsp. chia seeds
1/2 cup almond milk
1 tsp. hony
1 tsp. peanut butter
1 tsp. hemp seeds
1/4 cup fresh fruit
Directions
Combine chia seeds and almond milk in a container and stir. Let sit for 2-3 minutes and stir again to combine. Add honey and peanut butter. Cover and refrigerate for 2 hoursm top with remaining ingredients, and enjoy!
5. Buffalo Cauliflower Steak
Ingredients
1 head cauliflower
3 tbsp olive oil
1 tsp. salt
1/2 tsp. pepper
1/4 cup buffalo sauce
Directions
1. Trim the bottom of the cauliflower head. Add to boiling water and cook for 6-8 minutes (depending on size).
2. Meanwhile, preheat oven to 450 degrees.
3. Remove from water and let steam for 5 minutes. Top with olive oil, salt, and pepper.
4. Roast for 40-45 minutes, until browned and crispy.
5. Remove from oven and drizzle with buffalo sauce. Enjoy!
