Nutty Energy Bites
Ingredients
1/3 cup of nuts (I used almonds)
1/3 cup of nuts (I used cashews)
1/2 cup of pitted dates
1 tbsp chia seeds
1/2 tbsp PB2 powder
1/2 tbsp coconut oil or olive oil
coconut shavings for rolling
*You can also use pecans, walnuts, Brazil nuts, macadamia nuts, etc.
Instructions
1. Put all ingredients in a food processor. Pulse for about 1 minute
2. Roll 1 tbsp portion of mixture into a ball
3. Coat in coconut shavings
4. Refrigerate for a few hours before serving
Makes 8-10 balls
